Coconut Milk Chia Pudding

Coconut Milk Chia Pudding with Stewed Mandarins and Pineapple

A powerhouse #dessert! Chia seeds have a delightfully gelatinous texture with massive amounts of fiber. Serve with your favorite fruit.


Serves 2-4


¼ cup Chia Seeds (buy organically grown, if you are able to)

1 cup Coconut Milk*, fresh if at all possible (if not, Trader Joe's works well)

1 tbsp Honey

1 tsp Vanilla extract


Method:

Stir all the ingredients together. Refrigerate for 2-3 hours.

Stir again before serving and layer in a glass for a parfait effect.


You may certainly experiment and use different milks or juices for your base. This will taste great with any tropical fruit like soursop or sugar apple!


*chill first to remove any fat that floats to the surface. Save that fat to use in another dish.
